Dinner: savory pattycakes

Lately I’ve been kind of obsessed with making savory vegetarian burgery cake things for dinner. I don’t know where this came from, but every time I see a recipe and accompanying photo in a magazine, it looks like the best thing ever to me. They’re never quite as amazingly delicious as I think they will be, but they are good, and the best part is that you can mix it all up in the morning and then just pan-fry them at dinnertime, serve them with some broccoli or on a salad, and you’re done.

I made chickpea patties (sort of like smooshed falafel, and recommended for the Greek yogurt dressing that you make to go with it), corn cakes (pictured), and millet cakes, which prompted the following conversation when the children wouldn’t eat them (shock of the century there, I know! don’t all kids love millet cakes?):

Julie: C’mon guys, eat your millet cakes!
Dave: I think that in order for them to like millet cakes you really have to have brought them up eating them.
Julie: What are you talking about? They’re children now! See them there, with the millet cakes on their plates? That’s me, bringing them up eating millet cakes!
Dave: You needed to start even earlier.
Julie: Well. I like them.
Dave: They’re the best millet cakes I’ve ever eaten.
Julie: Hush.
Dave: You guys want me to make you chicken nuggets?
[General screams of relief and love from the boys. Zuzu, who at 10 months old, is, in fact, being brought up on millet cakes, ate her darn millet cake, thank you very much. Ok, she ate a weensy part of it. Still.]

    I think the millet cakes sound delicious! Although I really have no time to mix anything up in the morning. I’d have to get up at 4:30 to start mixing millet, which might, in fact, be part of the charm.

    Well, EVERYONE knows that millet cakes are really good only if you have churned your own butter, which your children could do while you mashed the millet in your new Apron! And you must have been down to the bottom of your Barrel of Molasses, since is a shame because that’s really what makes millet cakes go over the top. Well, sorry I can’t stay, I gotta go hitch up my goat-cart and get these eggs to market.

    At Isaac’s Waldorf preschool, every Wednesday is “Millet Day”, when they eat millet porridge for their snack. I’ve been told that he eats four or five bowls of it. When we ask him the days of the week, he says Sunday, Monday, Oatmeal Day, Millet Day…

    We happened to be on an airplane ride back from Pittsburgh on Saturday and met some (very non millet-eating) preschoolers across the aisle. Isaac told them how old he was, then said, “When I’m five, I can go to Kindergarten. And I can pack my lunch in a lunchbox and take it to school. And I can teach my mom how to make millet, and I can take millet in my lunchbox…” I was praying that the mom didn’t ask him to repeat himself. The fact that he eats four bowls of millet weekly is amusing enough to my family. In a diner in a small town in Western PA, on our trip, after taking a bite of his grilled cheese, he announced, “I don’t care much for American cheese!”

    Your kid eats millet and hates American cheese? What are you raising? A communist???

    I’ve made something similar with Butternut squash risotto…I made the risotto just so I could have the little fried cakes the next day, actually.

    I am so totally making nut burgers. Which I will love, and which may seal the deal as far as getting pizza every night.

    I just have to say that I love how Emily and Anne can turn almost any modern-day post into a pioneering adventure.

    I think millet on the curriculum would totally sway me toward a preschool, despite the sure knowledge that it would taint my kid as a seed-eating freak.

    Lastly: FRIED RISOTTO CAKE! Oh my gracious, Lori, YUM!

    Anytime I hear the words “butternut” and “squash” together I start salivating – those sound great! Here’s a recipe for some fantastic veggie burgers that you should make the day before but are SO WORTH YOUR TIME and, I might add, are delicious enough that even my sometimes picky son gobbled them up.
